We invite you on a journey back in time to the Austro-Hungarian era, where under Emperor Franz Joseph I, unique flavors were crafted that today form the foundation of Central European cuisine. At Pivnice U Čápa, we’ve prepared a special menu that blends tradition, elegance, and the nostalgic aromas of the monarchy. We’ll begin with a Czech classic—our homemade taliáni sausages served with both full-fat and krems mustard, grated horseradish, and bread. This simple delight, popular among both commoners and nobles alike, will set the tone for the feast to come.
Next, warm up with our venison broth made from roasted bones, perfect for the cold winter days. We’ve complemented it with meat dumplings and traditional pancake noodles, as if it were served on an estate deep within the Habsburg forests.
Now onto the main courses, where wild game specialties are beautifully married with Austro-Hungarian culinary traditions. Our Esterhazy beef sirloin is prepared in the classic way, with julienned roasted vegetables, capers, and potatoes, subtly seasoned to allow the meat’s natural flavor to shine. Our wild boar schnitzels with garlic will transport you to the forests, where the aroma of freshly prepared game meat enchants everyone. And naturally, there’s our homemade potato salad to complete the meal.
Game hunting lovers will also enjoy the venison goulash in red wine served with buttered spaetzle, or the venison steak with homemade potato croquettes and a juniper berry sauce with cranberries. For a truly extraordinary taste, we offer wild boar leg with rosehip sauce and gingerbread dumplings—each bite evokes the history and nostalgia of the fallen empire.
